Summer strawberries are in full swing so get out to the local farm for some berry picking or your local shop. Eating in season means fresher, riper berries that don’t have to travel far to get to you. They not only taste better but cost less. This salad is perfect for hot days when you want something refreshing and delicious.
Strawberry Cucumber Salad
2 large cucumbers, spiralized **I use a peeler and just make wide ‘ribbons”
2 cups strawberries, sliced
½ cup feta cheese, crumbled
2 Tablespoons fresh mint, chopped
Dressing (recipe below)
Mix together cucumbers and strawberries. Chill salad for atleast 20 minutes. Divide among 4 plates. Top each with feta and 2 Tablespoons dressing
Lemon Poppy Seed Dressing:
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- 1/2 teaspoon poppy seeds
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Whisk everything together before serving.
